Crockpot Pineapple Chicken

I am one of those cooks who hardly measure so these measurements are all approximate. If at the end it does't taste right tweak it (thats how I cook and by smell) if it is to sweet add more soy if its to salty add more honey ... Just play with until it is to YOUR liking :)

2.5 lbs chicken breast cut into cubes
1 red bell pepper sliced in strips
1 green belly pepper sliced into strips
2 cans pineapple chunks in natural juice
1/2-3/4 cup low sodium soy sauce
1/2 onion finelly chopped
3 cloves garlic, minced
1 tsp. ginger ( i use powder)
1/2 cup honey
1/2 tsp pepper flakes
4 tablespoons cornstarch

Pour juice from canned pineapple chunks into a small mixing bowl add in soy sauce, pepper flakes,garlic, ginger and honey, whisk to combine. Add cornstarch and stir until combined.
Place chicken, onions and pineapple chunks in crockpot pour "sauce" on top and cook on low 4-5 hours. Add bell peppers the last 20-25 minutes of cook time.
Serve over rice.
